Boy, oh BOY! Do I have an incredible recipe for you this morning! Some mornings I really want a delicious, healthy and hearty breakfast. (I think all this chilly weather amplifies this wish x10) But I just don't have the time before I am running out of the door scrambling through my to-do list.
But this recipe is SO easy. and delicious. and it is like a fiesta in a bowl! Not only does it taste great, but it is packed with protein and fiber to keep your energy levels up all the morning long. And it is ready before you can say "fiesta for breakfast!"
Spray a pan with a little olive oil, crack two eggs in the pan, scramble them with a fork, add your favorite cheese (I use cottage cheese or mozzarella!), heat until cooked. Put eggs into a bowl, add a spoonful of beans, salsa, and avocado slices. DONE! So easy, so delicious, so healthy. Let's have a fiesta!
