Y'ALL, I'm freaking out! SO excited! Because I woke up at 11:00AM this morning! This is huge y'all! I usually wake up at 6AM...wide awake! But this morning I slept straight until 11. I did go to bed last night a little later than usual (hello, 3AM) but usually I go to bed late and still wake up at 6. This morning was a wonderful exception to my usual sleep-schedule.
I woke up, had my FAVORITE protein pancakes (2 eggs + one banana in the blender. Pour, heat, flip, devour) with a side of my FAVORITE peanutbutter (buy it HERE)...
I would say it's been a pretty good start to the weekend. And I think last night started it off great as well!
My good friend Ellie and I met up at The Pine in Athens, Georgia. We decided that we want to make it through our entire Athen's restaurant bucket list before graduating and we had heard a bit about The Pine. We had to try it out!
Upon arriving, we had already looked at the menu online, so we knew what to expect.
We started off sharing "The Ezra" Fire Flat.
It was a delicious, crisp flat with smoked salmon, capers, red onion, and cream cheese. Our waitress told us that everything was made in the woodfire oven, including the Fire Flats. I loved its crispy crust and it was so fun to share and catch up with Ellie.
Next, our waitress suggested that we share the Chicken Tikka Masandwich.
I don't think I had ever had anything like it before! I absolutely loved the yogurt cilantro pesto with hints of Indian coriander and diced chicken. I would definitely order it again!
And finally, we tried the seared okra, which we both decided we HAD to make at home sometime. It was delicious, fresh, and perfectly sliced and seared.
It was such a great time chatting with Ellie and tasting some of the local Athens' food fare. We listed all of the restaurants next on our list and recipes we can't wait to try at home. It was a great dining experience and I would definitely suggest it if you are in the Athens area!
