CranApple Dos-i-do's

No, these are not dos-i-do's as in the Girl Scout cookies. These are dos-i-do's as in "Hey! It's fall! And these are so delicious that I must dos-i-do on over and grab another one!" 

They are similar to a danish, but they are much, much simpler and consist of only three ingredients: 1.pre-made pizza dough, 2. cranberry apple jelly or preserves, and 3. just a wee bit of butter. While they are baking, your house will smell like a delicious pie.

I got the idea for these CranApple Dos-i-do's after visiting Trader Joe's  and seeing that they were sampling different jellies from their sweet selections.

Since it is fall, I chose the CranApple Butter to make these dos-i-do's and boy, oh boy! Is it yummy! I'm so glad I have leftovers to spread on toast, biscuits, crackers, pretzels, you name it.
I purchased the pizza dough pre-made at Trader Joe's, but I know many other stores offer it as well. Heck, if you want to be healthy, you can even grab pre-made whole wheat pizza dough. But I chose the white, soft dough for these little treats.

Firstly, you will want to flour your work-surface. 

After making sure your surface is nice and flour-dy, you will want to pinch off the pizza dough into two-inch doughballs. Roll the doughballs in the flour, and flatten each ball into a small disc. 

Next, you will spread each dough disc with a little bit of butter and place a dab of jelly in the middle of each disc. 

Next, fold the discs in half, making sure to tuck the jelly goodness inside of each little pocket. 

Press the edges together with the tip of a fork to seal the CranApple butter inside. 

 Place the dos-i-do's on a baking sheet and pop them in the oven at 400 degrees for about 12-14 minutes. (depending on the size of your pockets).

When they are golden brown, take them out of the oven and let cool for 5-10 minutes. Resist the urge to take a bite as soon as they are out of the oven. I may or may not have burned my tongue. Oh yes I did. Worth it. 

While waiting, you can use this time to clean up the big flour-y mess you made...

Worth it. 

Now dos-i-do on over to the kitchen and bake these up!

CranApple Dos-i-do's


-Premade, Prebaked pizza dough
-CranApple Butter/Jelly/Preserves
-A little butter for spreading on the dough

1. Preheat oven to 400 degrees and flour your baking surface
2. Pinch pizza dough into 2-inch dough balls
3. Roll dough balls onto the flour surface, press flat into discs. 
4. Smear a little butter on top of each dough disc
5. Place a dab of jelly into the middle of each
6. Fold each disc in half and press the ends together to seal the jelly inside.
7. Bake for 12-14 minutes or until your dos-i-do's are golden brown. 
8. Dos-i-do and grab another!

A Weekend in Tiger, Georgia

This past weekend, I had the wonderful opportunity to go on a retreat with CRU at UGA. It was so great to break away from the busy school life and to relax, worship, and get closer with God.

I am so blessed to have been able to meet such amazing people and to see God's great beauty all around! 

It was definitely fall in Tiger, Georgia. The wind was brisk and the leaves were orange and brown and crunchy. My favorite.

On Saturday morning, my good friend Kelsie and I woke up to see the sunrise and to have a little quiet time before the day began. It was so relaxing and peaceful. 

And quite chilly as well. We bundled up and drank cocoa and cider. 

Lots and lots of cocoa and cider.

We were able to go on a hike led by one of the counselors and were led to a beautiful waterfall.

Of course, we had to have a photoshoot upon arriving to the waterfall.

I can't believe I went into this trip without knowing many people, and I now I feel as though I have known some of these people my entire life! It was definitely one of my favorite weekends and I am so, so happy to be a part of this wonderful community.

White Tiger Gourmet in Athens

I am so thankful that my job at the Fresh Market encourages me to talk about food, restaurants, and recipes each and everyday. I love hearing what people are baking or cooking up and I enjoy learning about events happening in my city.

Often times, I am asked what my favorite restaurants are in Athens (Ummm, Mama's Boy and Ike and Jane's) and other times, I am told that I MUST try this restaurant or that restaurant in the area. Tonight, my dinner decision revolved around a recommendation for amazing barbecue: the White Tiger Gourmet. 

 Wow, talk about a fun location. At first upon arriving at the correct street address (thank you, GPS) you have to ponder whether or not you are in the right place, because it appears that you are in a neighborhood. You are in fact in a neighborhood. and at the right place.You may also have to park on the side of the street...which is totally okay. And worth it. Because this restaurant is so, so good.

The decor is so adorable. The atmosphere is so relaxing and eclectic. 

And I hear that there is sometimes live music. I wanted to sit and stay all night long. But I had homework to do. Darn. 

And the delicious. I want to try everything on the menu. 

I ended up ordering the Barberella: "Smoke pork topped with red and white BBQ sauce with mozzarella cheese served on a toasted Luna ciabatta." The Luna bread is baked fresh at Luna Baking co. right around the corner! The sandwich was delicious, hot, and filling. And the warm, gooey mozzarella was just what I wanted on this chilly night.

Next time, I'm looking to try the Portabella Cheeseburger or the Seared Salmon Ciabatta. Also, I may need to order a side of their mac and cheese. It looked glorious.

The desserts looked awesome. They had an array of homemade chocolates including chocolate covered bacon and chocolate covered pork rinds. They also had an apple crisp and ice-cream special this evening. I skipped on dessert because one of my roommates so kindly brought me a cookie from Insomnia Cookies in downtown Athens and I had that waiting for me at the house. (And oh my word... the cookie was amazing as well.) 

I can not wait to visit the White Tiger Gourmet again.You should definitely give it a try if you are in the Athens area.  I love living in this city of delicious food and fun.

One Doozy of a Day

Today was most certainly a doozy of a day. So much of a doozy, I don't even have pictures of delicious baked goods or sweet treats to show you. I know, I know. I can't believe it either.

 I woke up at the crack of 5:30 AM (it wasn't quite yet dawn) and drove back to UGA from Spartanburg, SC where I was visiting my aunt, uncle, and cousins this past weekend. I arrived right on time for my Italian composition and then attended the rest of my classes like I usually do on Mondays: Political Science, Advertising, and then my New Media Class. Today, my New Media project group and I recorded parts of our video project after our class was over. It is so, so exciting. But still remains top secret! Because we are competing against other members of our class, I can't tell you any of the details of the project just yet. I'll be sure to let you guys know about it as soon as I can. :) 

After shooting the project, I headed straight to work at the Fresh Market from classes. I worked until a little after 8, and then zipped right back to school for an ADPR Connection meeting. ADPR Connection is a huge networking event that UGA's PRSSA team puts on every year. I am so excited and thankful to be a part of the decorations committee! It has been so much fun thinking about ideas and seeing what businesses in the community want to participate in our event. I feel I have learned so much already and the event has not even started.

After the ADPR Connection committee meeting ended, I walked back to the parking deck to tire was flat. My brand new tire! I had just purchased this tire last week when the previous tire was found to be a pancake...which is a funny story as well.

Last week, I pulled into Walmart to get my oil checked, and as soon as my car approached the workers, I noticed they were staring and staring at my car. I got out of the car and said, "Hello! I would like to get my oil changed!" And they responded with, "And...a new tire." 
WHAT? A new tire? I had not the slightest clue what they were talking about. I walked to the side of my car to see what they meant. And there it was...a pancake tire. How does that happen? I pull into the autoshop to get my oil changed and my tire is pancake flat! I was at the right place at the right time. That's for sure. 

But now, that brand new tire is flat yet again. It looks like I'm going to be heading to the dealership bright and early tomorrow morning to see if they can fix it before I have to head to classes. I'm crossing my fingers. It was a doozy of a day indeed.

Friday Favorites

Well I'm a bit disappointed in myself in that I spent way more time on

 I should have while in my classes today. At least I made it look like I was
 typing notes. What can I say? It's Friday, right? I have been feeling so inspired by

Birthday Breakfast at Mon Amie

Well, I am 20. 
That is so strange to say....


As in... I'm in my 20s! As longer a teen? As in...the roaring 20s?
Wow! I have truly been blessed for the wonderful relationships and friends and happiness that have filled my teen years. 
And I can't wait to see what the future holds for my... twenties!!

Until then, 
my aunt and uncle treated me to one of my favorite places in the world this morning for my birthday breakfast: Mon Amie in Spartanburg, SC. 

Their french toast? Their crepes? Their everything? Ohmyyum. Just take a peek: 

I don't think a birthday breakfast could be more beautiful!
The Parisienne French Toast is to die for. 
Raspberry sauce, a cream-cheese raspberry cheesecake whipped topping,
fresh strawberries and blueberries and a dusting of powdered sugar. 

Can I please just eat here everyday of my life? 
I really could. 

Previously, when visiting Mon Amie, I ordered the crepe Mon Cheri. It was wonderful as well. 
I really don't think you can go wrong with anything on the menu:

Have I said that this place is my favorite yet? Well, it is! :)
